Thai One On

Last night we had friends over for dinner and had some prawns and salmon left over. With the price of seafood these days, I hate to let any go to waste. So after some digging I found this recipe from Epicurious. I made a few small changes to the recipe and it turned out awesome!









Thai-Curry Seafood Stew

1 tablespoon Thai red curry paste
2 1/2 cups canned unsweetened coconut milk
1 cup water
1 1/2 cups purchased broccoli slaw
2 pounds assorted seafood ( I had salmon, prawns, scallops, squid and mussels)
1/2 cup chopped fresh basil
2 tablespoons fresh lime juice
1 tablespoon grated ginger (this was not part of the original recipe)
2 tablespoons fish sauce (optional, but was a great addition to this dish)
2 cups hot cooked jasmine rice or medium-grain rice (2/3 cup raw) (I used sushi rice which had a wonderful texture for this stew)

Place curry paste in large pot. Whisk in 1/2 cup coconut milk. Bring to boil; boil 1 minute. Stir in remaining 2 cups coconut milk and 1 cup water.



Add broccoli slaw and seafood.


Return to boil. Reduce heat to low; cover and simmer until seafood is cooked, about 3 minutes. Add basil, lime juice, ginger and fish sauce. Season with salt and pepper.

Press hot rice into four 2/3-cup custard cups, dividing equally. Invert cups to unmold rice into 4 bowls. Spoon stew around rice and serve.

This was a little spicy for my liking, but if you like spicy food the heat would probably be just right. The broth was rich and had an authentic Thai flavoring, however, if you are watching your figure you may want to replace the coconut milk with the light version!

The Weekly Meal Plan

As most mothers of young children know, it is very important to be organized. While most aspects of my life are in complete disarray, when it comes to food, the earth is spinning properly on its axis.

After realizing what a complete and utter gong show grocery shopping with an infant is, I resumed my weekly meal planning and now order my groceries online and have my husband pick them up. It is a heartwarming sight, to see my husband come home on a Thursday evening, arms laden with groceries, and knowing that I didn't have to haul a screaming baby around the grocery store for 45 minutes to accomplish this.

Now that I have bragged about how utterly organized I am in the food department, I will confess that this week I slipped up, thus necessitating a trip to the grocery store on a Sunday afternoon to pick up enough groceries for this weeks meal plan.

And what is on the meal plan you ask? Well here it is:
Sunday: Thai-Curry Seafood Stew
Monday: Meatloaf, Coleslaw and Smashed Potatoes
Tuesday: Panko Parmesan Pork chops and Polenta (an alliterative meal if I have ever seen one!)
Wednesday: Shells and Cheese
Thursday: Curried Chicken in a Cardamon Infused Coconut milk.

As you can see my meal plan usually runs from Friday to the following Thursday to coincide with the grocery ordering, and I rarely plan weekend meals in advance.

Welcome to my blog!

Welcome everyone! And by everyone I do realize that I am currently speaking only to myself at this point in time. My hope is that eventually I may end up with a following that includes people other than my immediate family.

I am a 27 year old stay at home mom to my beautiful baby boy. I love to cook and bake and peruse foodie blogs and websites.

Dinners in my house are usually healthy, simple fare but I like nothing better than the opportunity to show off my culinary talents when entertaining. I am also the designated dessert maker in my family. To be honest, I don't know how much of a sweet tooth they all have but at least they are willing to indulge me!
